Here in “sunny” Florida we are blessed with warm, wonderful weather throughout most of the year, even in the winter months. During those few days when the temperatures drop to the 40’s and 50’s, we feel as if we are going to freeze to death! There are a few scattered weeks here and there (mostly in January and February) when it is dreary, cold and not fun to be outside in Florida! And, wow, we aren’t used to that! So, I often send my husband, Mike, out back to grill … and grill he does! Recently, he went to Academy Sports http://www.academy.com/ and bought these very reasonable priced skewers. You can see them here:
Mike made wonderfully delicious chicken with flavorful grilled vegetables. Just writing about it is making my mouth water! It is quite simple – so I thought I would share Mike’s recipe:
- Chicken (cut up in small pieces);
- Red, yellow & green peppers cut up;
- Green zucchini cut up;
- Pineapple pieces cut up;
- Mushrooms cut up;
- Lawry’s Teriyaki Marinade (http://www.mccormick.com/Lawrys/Flavors/Marinades/Teriyaki)
- Garlic salt, Lawry seasoning
- Salt & Pepper to taste
Put all the above ingredients on the skewers, baste on the grill with the marinade and the sprinkle the other seasonings.
Grill for about 30 minutes or less. (Note: You can marinade in whatever liquid you choose – Italian dressing and olive oil work – and some people like to use low sodium soy sauce. Get creative! Also, consider using a variety of fresh veggies – the more colorful, the better it is for you!)
Of course, the cook didn’t love my taking a picture of him – but I snuck one in any way!
