Dee Dee’s Delicious Meal-in-One Salad Recipes – “A Healthier You – Food, Fun & Fitness”

Welcome friends!  Some of you may remember Dee Dee recently shared her health story.  If you missed it, you can catch up at: 



As requested by many, here are two of Dee Dee’s meal-in-one salad recipes:


  • Salad with Chicken Tenders
  • Salad with Pork Loin


Please note, like a skilled artist painting on a blank canvas, Dee Dee told me she  doesn’t normally “measure” things and she “creates” as she cooks in the in the kitchen.  Most of the ingredients listed are approximations. 


The first salad creation is Dee Dee’s “Salad with Chicken Tenders.” 



  • Hearts of Romaine lettuce
  • Perdue Gluten Free Chicken Tenders (located in freezer section)
  • Bacon slices that have been torn into bite-size pieces
  • Sliced cucumber
  • Steamed asparagus
  • Roasted grape tomatoes
  • Parmesan cheese
  • Dressing: Brianna’s Homestyle Poppy Seed



 Cook chicken as instructed.


Roasted Grape Tomatoes:  Line pan with foil.  Halve grape tomatoes.  Place tomatoes “seed-side-up” on the foil.  Spray tomatoes lightly with cooking spray and sprinkle with McCormick Perfect Pinch seasoning (garlic and herb) and grated Parmesan cheese.  Place under the oven’s broiler for 8 – 10 minutes or until Parmesan cheese turns a light brown on top.   


Mix the salad greens, cooked bacon bits, cucumber, steamed asparagus in a bowl. 


Add the roasted grape tomatoes to the mixture.


Drizzle Brianna’s Homestyle Poppy Seed dressing over the salad mixture.  Dee Dee says the dressing is sweet and delicately flavored.  You might like to know this dressing adds a nice touch to spinach and bacon salads, too!




Another one of Dee Dee’s favorites is her “Salad with Pork Loin.”  



  • Fresh pork loin (two per package)
  • Garlic powder
  • Onion powder
  • Salt & Pepper
  • Salad greens such as hearts of Romaine, Spring Mix, 50/50 mix or butter lettuce.
  • Craisins
  • Walnut pieces
  • ½ Avocado
  • Newman’s Own Lite Balsamic Vinaigrette




Season fresh pork loin with garlic powder, onion powder, salt and pepper.  Roast according to package directions.  Let stand for 10 minutes and cut into cubes.


Place salad greens in bowl.  Sprinkle cubed pork loan on top of greens.  Add Craisins and walnut pieces.  Top salad mixture with sliced avocados and vinaigrette dressing.  Serve and enjoy!

  • Both of these sound absolutely delicious! I’m not a huge fan of pork, but anything that had avocado on it is a major plus in my book 😉 The chicken tender salad may definitely have to make it’s way onto our menu soon, I have a super easy tender recipe that I use whenever I can.
